Imagine your salad on steroids.
That’s the kind of spectacular that diners can look forward to at “The Greenery” when it opens later this winter in Sayville, in the Railroad Avenue spot formerly occupied by American Cheese.
“It’s going to be a fast, casual, health-driven sort of lunch-dinner concept,” said The Greenery owner James Caporuscio, 39, who already operates local favorite Café Joelle on Main Street. “We’re going to focus on local ingredients — and our salads are going to be a lot different than the salads you get at a deli.”
Consider the array of goodness that will go into The Greenery’s Veghead Bowl: blackened sweet potatoes, caramelized sumac onions, sliced almonds, sunflower seeds, sautéed kale, turmeric cauliflower, brown rice and smoky mayo.
Along with a bevy of signature salads, the 16-seat eatery will offer build-your-own salads and signature and build-your-own protein bowls, along with smoothies, wraps, kombucha tea and fresh-squeezed lemonade.
“I felt like there was a large void in the town — where you can go and get something really fast and really healthy,” said Caporuscio, who took over Café Joelle two years ago.
The goal is to open this New Year’s Day, he said. The hours of operation will likely be 9 a.m. – 9 p.m.
Adjusting to the changing times and the demands of the pandemic, The Greenery — given its proximity to the Sayville Train Station — will offer trackside pickup by Memorial Day 2021, Caporuscio said.
“We’ll actually bring your order right across the street to the railroad station,” he said. “During the summer, you have a ton of people who are coming in to town for the ferries and Fire Island.
“A lot of the people coming in on the train are living healthy lifestyles,” Caporuscio continued. “They’re going to the beach. They want to look good. They want to feel good. They want clean-living, healthy-living.”
Furthermore, The Greenery will be very technology-driven. You’ll be able to order what you want and pay for it online, and then come in to the eatery and grab it off a shelf near the entrance.
“It’s paid for — and you’re gone. There can be very little interaction, if you want it that way,” Caporuscio said. “But we’ll also have a full staff of knowledgable employees that can help you.”
The Greenery pays some homage to the Sayville eatery where Caporuscio began his restaurant career as a teen, La Tavola, which had been called J.D. Greenery.
“It’s a name that people in Sayville can relate to, and it makes very much sense with the type of food that we’re selling,” he said. “Being green and being healthy.”
Greater Sayville Chamber of Commerce President Eileen Tyznar said The Greenery will be a great addition to the community’s “growing Railroad Avenue shopping and eating experience.”
“The chamber is looking forward to this new type eatery, where people can enjoy healthy, fresh food prepared with a twist,” she said.
