Consider them a cheat sheet to hit the ground running once you get a seat inside the restaurant at 21 Main St., a mansion formerly occupied by the Bluestone Tavern.

Nothing’s in stone though. Chef Roberto “Bobby” Baez said that pretty much every item on the menu can be made to order. So if you’re vegan, vegetarian, pescatarian, paleolithic, or have food allergies, you can count on getting hooked up by the kitchen.
